With February temperatures well below freezing, staying warm can mean more than just tweaking your thermostat. Brighten your weekly forecast and turn up the heat with Pronto’s easy to make, sure to please, rocket-hot Chili!
You will need:
1 pound of ground beef, cooked and drained ¼ tsp all spice
1 TBSP Worcestershire sauce ¼ tsp nutmeg
2 cups of chicken broth 1 tsp cumin *
½ yellow onion, diced 2 TBSP chili powder *
1-2 tsp crushed garlic juice from 1 lime
½ jalapeño * 1 TBSP honey
1 red pepper, diced ½ tsp cayenne *
1 cup of tomato juice, such as v-8 salt and pepper to taste
Brown the ground beef, and set aside. Heat a large pan or Dutch oven with olive oil until hot. Add the onions, garlic, jalapeño and red pepper, and sauté until tender. Add the browned beef, and then the liquids – Worcestershire sauce, chicken broth, tomato juice, lime juice and honey. Mix well, and reduce heat to low and simmer for 5-7 minutes. Slowly add in the tomatoes, and then the spices – all spice, nutmeg, cumin, chili powder, cayenne, salt and pepper. Do not over-salt. Continue to simmer until chili thickens, approximately one hour. Taste throughout, and turn up the heat as needed.
*Measurements for these ingredients are conservative. For those seeking extra warmth, simply adjust these ingredients as desired. Serves 4.
